Easy Vietnamese Sandwich with Tongue & Carrot-Daikon Slaw

Increasingly popular in specialty shops, Vietnamese baguette sandwiches are easy to prepare, affordable and somewhat exotic. Called banh my or banh mi, they typically include thinly-sliced vegetables and meat, ham pork chicken and /or tofu with cilantro. Nations Best® deli meats, like Tongue, Turkey, Corned Beef or Pastrami, work especially well, and can be spiced up with some jalapeno peppers, for the more daring.

    • 1 baguette, sliced open
    • 1 TB mayo
    • 3 slices, Nations Best Corned Beef Tongue
    • 2 cucumber slices, cut lengthwise, so long and thin
    • 2 carrot slices, cut lengthwise, so long and thin
    • 2 daikon slices, cut lengthwise, so long and thin
    • 3 TB coleslaw
    • 6 fresh cilantro leaves, to taste

    1. On the inside of the bottom sliced baguette, spread the mayo.
    2. Top with the tongue, then each of the vegetable slices. Cover with the coleslaw, adding more if you like it to spill out. Finish with the cilantro and the top of the bread.
