    Brisket Sandwich with a Mango-Jicama Slaw


    Nations Best®First Cut Brisket just got an island makeover. This mango-jicama slaw adds a taste of the tropics. Sweet potato fries are a fabulous accompaniment.


    • Jicama-Carrot-Mango Mayo Slaw
    • 1 c prepared mayonnaise
    • 1/4 sour cream
    • 1 Tbsp orange zest
    • 2 Tbsp fresh orange juice
    • 1 ripe mango, pitted, peeled and cubed
    • 1 tsp ground cumin
    • 2 c each grated jicama and carrots
    • 1/4up chopped fresh cilantro leaves
    • 8 Kaiser rolls (or other)
    • 3 lb thinly-sliced Nations Best®First Cut Corned Beef Brisket
    • 8 ounces thinly-sliced Monterey Jack cheese


    • Prepare the slaw. In a food processor, combine the mayonnaise, sour cream, orange zest, orange juice, mango and cumin until smooth.
    • Mix the mayo mixture, jicama, carrots and cilantro in a bowl. Toss well.
    • In the rolls, layer the brisket, cheese and slaw.
