4 scallions, including 3 inches of green, thinly-sliced on the diagonal
1 celery rib, thinly-sliced on the diagonal
6 oz snow peas
2 c coarsely-chopped Nations Best® Seasoned Turkey Breast
2 c cooked rice, for serving
2 Tbsp slivered almonds, toasted, for garnish
Directions
Combine the broth, cornstarch, ginger and soy sauce in a 2-cup glass measure. Microwave, uncovered, on high, until thickened, about 2 to 3 minutes, stirring every 30 seconds. Set aside.
Place the carrot and oil in a 2-1/2uart casserole; cover with plastic wrap. Microwave on high until the carrot is crisp tender, about 1 to 2 minutes.
Add the mushrooms, scallions and celery to the carrots and microwave on high for 1 to 2 minutes. Stir well.
Stir in the reserved broth mixture, the snow peas, and turkey. Microwave again on high for 2 to 3 minutes, stirring after 30 seconds. Serve over rice and sprinkle with almonds.
