Southwestern Beef Burritos

Bursting with Southwestern flavor, these Nations Best®Roast Beef burritos taste great with the olives, tomatoes, artichoke hears and diced green chiles. Theyre fun to make, and can be served with additional side garnishes.

Ingredients
- 1 lb Nations Best®Roast Beef, thinly-sliced or julienned
- 2 Tbsp olive oil
- 1 onion, quartered
- 1 Tbsp minced garlic
- 1 tsp ground cumin
- 1 1/2tsp chili powder
- 2 medium-size seeded tomatoes, chopped
- 1 jar (6.5 oz) marinated artichoke hearts
- 1/4 sliced black olives
- 1/4 canned diced green chiles
- Flour tortillas, warmed
- Garnishes
- Grated Cheddar cheese
- Sour cream
- Prepared salsa
Directions
- Heat the oil in a large skillet over medium heat. Add the onions and garlic and saut until soft, about 5 minutes. Add the cumin and chili powder and cook, stirring, for one minute. Stir in the roast beef, tomatoes, artichoke hearts with a tablespoon of the oil from the jar, the olives, and the green chiles. Cook, stirring, to heat through, 8 to 10 minutes.
- Spoon some of the roast beef mixture in the center of each flour tortilla and fold or roll to close.
- To serve, reheat filled tortillas and garnish with cheese, sour cream and salsa. Can wrap the tortillas in a napkin-lined basket too keep warm.
