Brisket Sandwich with a Mango-Jicama Slaw

Nations Best®First Cut Brisket just got an island makeover. This mango-jicama slaw adds a taste of the tropics. Sweet potato fries are a fabulous accompaniment.

Ingredients
- Jicama-Carrot-Mango Mayo Slaw
- 1 c prepared mayonnaise
- 1/4 sour cream
- 1 Tbsp orange zest
- 2 Tbsp fresh orange juice
- 1 ripe mango, pitted, peeled and cubed
- 1 tsp ground cumin
- 2 c each grated jicama and carrots
- 1/4up chopped fresh cilantro leaves
- 8 Kaiser rolls (or other)
- 3 lb thinly-sliced Nations Best®First Cut Corned Beef Brisket
- 8 ounces thinly-sliced Monterey Jack cheese
Directions
- Prepare the slaw. In a food processor, combine the mayonnaise, sour cream, orange zest, orange juice, mango and cumin until smooth.
- Mix the mayo mixture, jicama, carrots and cilantro in a bowl. Toss well.
- In the rolls, layer the brisket, cheese and slaw.
